1.) At a club, how many on-stage dances can a dancer expect to perform per night?
Depends on the club and number of dancers on shift, of course. At a busy club on a 7-8 hour shift with 15-30 girls on shift, each girl will appear on stage 3+ times for a 2-song set. At clubs with short songs (3 minutes) will get on stage more often than at clubs with longer songs (4-5 minutes). Girls who have lots of regular customers they're giving dances to or going into rooms will get on stage less than other girls.
2.) At an upscale club, what is an average amount a popular dancer could get in tips during one on-stage dance?
An upscale club is typically a non-extras club. Not taking Vegas into account, during weekday a girl who's shakin it good and making good eye contact with customers and interacting will get $20+ in $1 bills per set. Weeknight shift, $25+. Weekend night 30+. When club's packed or some dummy's making it rain, difficult to predict and sky's the limit.
3.) In regards to the previous question, what, if any, difference in that amount would there be between a female stripper and a male stripper in a gay club? Would the men make more or the women?
Thankfully I have no fucking clue.

I like tats on chicks. Preferably moderate amounts, but even a lot of tats does not detract from the sex appeal from my perspective if they're creative and not all blobbed together running into each other such as full arms or back jam packed with art. Even tats on thighs are cool I think

In the case where you're not a regular of hers, PaulDrake's advice is solid regarding how to phrase it - his phrasing tip is more effective and less expensive than throwing exorbitant tip money at her on stage hoping she'll get your hint. And if she doesn't come over, move on to the next girl or to the next club if no other girl at that club appeals to you.
I won't wait around for a girl I don't already know. If seeking time with an existing fave who's tied up at the moment, I'll do some drinking and chatting in the meantime but not more than 30 min, I ain't a dog waiting for my master to come home.

Some of the fakies feel alright, but rarely as good as natural.

^how does on "accidentally cut" a bouncer?
Was at Gold Club in SF around midnight. 2 uniformed cops cruised through, a male and a kinda hot Latina, male holding a clipboard. They cruised quickly through downstairs and then upstairs and split. Nobody paid them any attention, business continued as usual, non-extras club. Seemed it was more of a liquor license enforcement thing confirming no underage drinkers in club - that, or just showing LE presence inside briefly.
