When living near a club I frequented, I saw a dancer and various club staff around on several occasions. I always let them make the call on whether or not we exchanged greetings.
It was actually the bathroom attendant who seemed the most worried that I would out him when I saw him in the gas station store while he was talking to the clerk. He studiously ducked into the other doorway as I was going in. On a different night, he was on the other side of the gas pump and we exchanged a greeting, though.
Once I was out at the store and saw a cute girl walking in out of the corner of my eye. I looked away because I didn't want it to be weird. It turned out to be a dancer - she went out of her way to come over and greet me, which was cool.
The only time that was semi-awkward was when a dancer who had switched to door girl was out shopping with her boyfriend and baby. She came over and wanted to chat a bit. Her boyfriend was really chill, but the whole time, I was wondering what the etiquette is for that kind of situation. I think my baseline level of awkwardness helps out in these situations, since I can just switch reasons for being awkward rather than having sudden-onset awkwardness.

Not *just* to sit with me. Depending on her table game, tipping now and then can be a much better deal than the standard dance setup. Some have top-notch table game that's more enjoyable than a dance. I still wouldn't plan a visit around it, but sometimes the pricing structure can make improvising in the front room worth it. Tipping for massage, etc can also be OK, but not generally what I'm looking for.
If I wanted this and was curious, I would just ask her "how much tip would you be looking for to hang out like this for 10 more minutes?" If it sounds high, you could counteroffer and/or mention that you will be interested in dances afterwards. She likely has a target number for the interaction. It could be a typical spend for dances minus whatever the house would take if it were made during a lap dance. E.g., if she often sells 3 dances to a customer at $20 each, she might net $30 after the house cut/tipouts with an expected pre-dance hustle time of 15 minutes. So, she might want $30 or something along those lines for the additional 10 minutes to cover the 25 minutes of interaction.
As others said, it can also depend on how busy the shift is, your breath, general hygiene, club culture, etc. At some clubs, dancers typically sit and hang out for long periods while at others, they hide in the dressing room if they don't close the deal for a dance within the first 2-3 minutes.

I have had it happen a couple of times. When it was an obnoxious older guy who started talking at the stripper I was with, I claimed her by putting my arm around her waist and pulling her close and joined the conversation like we were a group of friends and all was well (he was with a different stripper). It sounds similar to your situation. Best move imo, would be to keep low-key touching her, signalling that while he might be forcing a conversation with her, she is occupied.

I think it's varying combinations of these: keeping the bathroom clean and presentable, pretense, logistics ( keeping a supply of dry paper towels and not having to touch the sink to turn on the water in a possibly suspect men's room), a presence to keep the men's room from being used as a makeshift champagne room, offering Listermint to freshen up in case of bad breath, etc.
FWIW, some more upscale places don't have restroom trolls, while some dives do (and vice versa)

Also, if you have your coming out ceremony in a troll-attended strip club bathroom, I think it's a standard $20 fee for officiating and any guests should, as usual, leave at least $1 even if they didn't pee or wash their hands. $2 if they couldn't make it to McDonald's and he had to use the room spray in addition to lighting the smoke stick to cover it.
