I have an unproven therory. I think that there are a lot of guys, especially younger ones, that spend the earlier hours trying to get into the pants of civilians. When that fails, they flock to the clubs as a last resort.
At a lot of the clubs where I live the most popular dancers don't show up until late because they know they'll earn enough money if they start work at 10 or 11 at night. So why go any earlier?
There are other forms of entertainment that are busiest late at night. Bars, for one. Theaters also. There's just something about going to strip clubs that makes them more alluring when it's done at night. Here in Seattle, during the summertime, when it's still somewhat light out at 10:00 p.m., the strip clubs take even longer to fill up.
At one of my favorite clubs here in NYC what you said is definitely true. People often use a strip club as their final stop for the night, and it does work well for that purpose. Good way to wind things down.
As others said, at least where I go the night shift is way better looking than the day shift too and there's way more dancers too. So it's generally not even really worth bothering with going earlier here.
Seriously though during the day I'm either working or sleeping in late if I want to visit a strip club during the night. Then there is supper and just running errands or whatever else you may need to do. By the time you get settled and get around to going to a club, it's 9 or 10 PM. I believe some may party earlier and just show up a bit later than that knowing the clubs don't get busy until later. Last weekend I planned on eating at Hooters around 10 PM. It was packed. I grabbed a bite to eat somewhere else and went to the strip club earlier than I planned. It wasn't crowded at all there at that time.
Some of you say that the guys go late because thats when the best dancers are there and some say that the best dancers are there late because that is when the most customers are there.
I can go along with Shadowcat's theory, although I'm not sure exactly how late is "late at night". I know this theory is true for the one juice bar I visit regularly, simply because you can't drink alcohol there and generally, the late night customers there are college kids who are already loaded by the time they arrive. I believe it is generally true for the one BYOB club near me, although when I stayed til 3am there once recently, it had already started to empty by then. As for my favorite place, since it's in a small town, I know it's true to only a small degree, since the number of nearby bars is small. (Of course, this doesn't stop people from drinking at home, or at least someone's home).
I generally go in the afternoon, mainly because that that's when my personal free time is (meaning no work, friends, family, etc). However, its not uncommon for me to go to a SC with friends late at night. Our reason for going then is that the other offerings at that time of night are full of dipshits.
Over the holiday weekend we went out with two other couples (dinner, movie, drinks) and around 2:30 we weren't quite done hanging out. Our options were regular clubs, shithole bars, or strip clubs. We walked into the regular club, spent 45 minutes to get one round of overpriced drinks and couldn't stand the company so we left without finishing them. We walked into the strip club, the parking guy had radioed inside already and we were escorted to a table where a waitress was waiting to take our drink order. The drinks were cheaper & stronger and even the girls preferred the company of strippers to that of the douchebags out at the club. Sure, the SC had some of those same idiots, but they left us the alone. We noticed another group that was entering the club when we were leaving had found their way to the SC too.
So, when I go during the day its 1 person for maybe 2-3 hours. At night, its 4-6 people for that same 2-3 hours. Despite their lower frequency, my nighttime visits account for more man-hours of SC occupancy than day hours - hence its busier at night (if I'm typical).
Customers who work in the service industry don't earn enough to go to strip clubs though. I know I couldn't afford what I'm spending in strip clubs when I worked in food service management and retail management.

Canny is dead on, the top shelf talent doesn't show up til 10-11, no reason to go earlier if you can stand the late hours.
I've found enough top shelf talent on the afternoon shifts.
