I doubt that a guy in his position could be convicted by a jury if represented by adequate council. I suspect they just intimidated him into pleading guilty.

When they find 5 mil in cash and you didn't pay taxes on it, it would be hard to explain it. That happened to the owner of my club a few years back; they found a bunch of large boxes of cash, and he served a couple years in jail. He's back now though.

I'm not accountant but it seems to me that it should be easy to hide income from the irs if you run a cash business. Unless the irs has an insider.
