The girls work in the positions that they want to work. But you are correct. Having nice looking bartenders and waitresses is kinda important. But if the dancers are not appealing, then you aren't coming back to that strip club.

She said she'd love to make the extra money, but then she'd overhears dancers talking about the guy who always tries to stick a finger in their butthole, or the guy who always twists their nipples and always looks "surprised" that it hurts them, or the guy who grabs on to their throat a little too tightly and won't let go, etc., and so on.
And she also knew that those guys weren't every guy in the club, but the reality is that she knew she wasn't built to deal with those guys even one time. She was fine getting a slice of strip club money from those guys while having a bar as a solid barrier between them. And that was her sweet spot on the spectrum of money versus dealing with the pervy public.
I can understand that. I may not like it, but I get it. Anyway, she's not a bartender there anymore. She moved on during Covid.
There's a club here where the bartenders are always smoking hot 18-19 year old women. Management pays awful and treats them mediocre. But these are college girls who are fine taking tips for looking cute in a strip club but don't want to get naked much less grind on random dicks.
It's kind of how lingerie models are always a step hotter than porn girls.
I'm not sure that working as a bartender at a strip club makes her a sex worker. I guess you could say she is a sex worker by being a sugar babe, but a lot of girls don't view it that way. She is one of those. But the part of her personality is the lying to the PL's. A good stripper has to make every man she sits with feel like they are the Bomb. She couldn't do that. I just know that. My impression is that, while the behavioral denominator is "willing to exchange money for sex", that doesn't mean that every sex worker will do well in a strip club environment, where the expectation is that a stripper winnows through a field of guys to pick out the ones she wants to deal with. As opposed to escorting, or even sugaring, where the woman can control the pace and volume to a greater degree.
I'll claim ignorance right off the bat. This is obviously a choice I've never had to make...
But I know different people who work in the same field, but some love a large, bustling office, while others prefer working in smaller, less frantic environments.

My baseline is that if the money (or "gifts", "allowance", or "support") stops, and that leads to the sex stopping, then that's sex work.
I would argue that the waitresses/bartenders often do sex work as well. I spoke with one waitress a couple days ago at my club who was frustrated because she was helping to cover dayshifts after the club fired somebody, when she usually works nights. And the club wasn’t being quick enough to find the replacement, in her opinion. On her usual schedule, she could rely on her established regulars to come in and buy bottles and take care of her specifically. I could be wrong, but I strongly suspect you have to be good at making customers feel like they are the bomb to keep that up consistently.
On the other hand, I think some strippers prefer using a different approach than fawning over customers to make money. Cubanas are an easy example 😁
^ You're not arguing with me. But some girls do view it differently. This girl is looking for one SD and have a long term relationship. Many of those girls will not let a man touch them unless they think there is a opportunity for that type of a connection. But we got kinda off the subject.

I hear you. That said, my personal opinion is that if the sex stops at the same time the money stops, then it's sex work. I personally don't think it matters if that relationship exists with one guy or 100 guys.

The prettiest regular I ever had started as a waitress, saw how much more money the strippers were making and then switched over to stripping. After a few years of stripping, she switched back to being a waitress in the strip club again.
She couldn't really handle being a stripper. She liked me and was always friendly to me but told me a lot of the customers were disrespectful and pervy. Many of the customers tried to go beyond just a lap dance while they were with her without asking her if it was ok first. Her worst experience was a customer who wanted her to pretend she was his 14 year old daughter while giving him lap dances. Some girls can handle being a stripper but some can't. So it's not surprising to see the prettiest girl in the club being the waitress or bartender.
what I learned is like most entertainment venues, the most money comes from selling drinks (which may be the most expensive edible resource). If the bartneders are so hot, why bother with a stripper if you can spend time with a bartender ONLY if you absolutely buy drinks. You don't have to buy drinks to get a stripper's attention. And its less stigma being a bartender than a stripper. Technically your clothes didn't come off.
