You can use either, but as OPillini96 says, the girls prefer dollars. I think it's for the same reason I prefer it - the biggest Mexican bill is 500 pesos, which is worth around 30 bucks. This means carrying around a significant amount of cash in pesos also means carrying around a big wad of bills.
For everyday stuff like getting a coffee, it's hard to get change for a 500 peso note so ordinary Mexicans tend to stick to 200 peso notes and smaller. So paying your girl with 500 peso notes is kinda inconvenient for her.
Arribas currently cost 100 dollars, and it's far easier for everyone to have a single Benjamin to hand over.
US dollars are preferred in Hong Kong. prices have gone up. the top shelf girls are asking 120 sometimes $150 now. I suggest negotiating with any girl that asks more than $80. you can use pesos sometimes with some of the girls but for the hotel, drinks, food, dollars work just fine.
