I feel like a lot of the listed females mentioned in this thread (not all) boil down to being more “girl hot” than “guy hot”.
By “girl hot” I mean it’s somebody attractive and has a sense of style. But maybe doesn’t have the quality of being as “fuckable”. For example, Sarah Jessica Parker is known for a sense of style and great hair and clear skin. And she’s most well known for chick-flicks like Sex and the City. Megan Fox had a certain amount of sultry and a bad bitch aspect to her and is someone who is “guy-hot”. Sarah Jessica Parker had a play-nice image and Megan Fox talked about before that it was difficult for her making friends (especially female friends)
Lizzo is an obvious example of girl-hot who was able to be portayed as a dancer in the Hustlers movie, despite that she would be laughed out of any Manhattan Club audition if she tried IRL. But hey, in fantasy chick flicks, somebody who can make it as girl-hot can cross over to guy-hot as well.

@nicespice - Re: Angelina Jolie. Guys were smitten with the Lara Croft video game character long before the movie came out. That might sound weird, but it's certainly not uncommon. It was much the same with the Jessica Rabbit cartoon character in Who Framed Roger Rabbit. I remember playing Tomb Raider (I think on PS2 back then?) and all we could think/talk about was if there was a real-life woman like Lara Croft, how fuckin' hot she would be. To her credit (and the makeup artists and wardrobe people) Angelina made a really good Lara Croft, but at least half the infatuation with the actress at that time was the feeling like she was a "fantasy come to life." I remember watching two movies in the mid 90s. One was Beautiful Girls and the other was The Truth About Cat And Dogs. If you still haven't figured it out, the "hottie" in both of these movies was Uma Thurman. It was amusing to me that all the guys and even the girls in both of these movies would fawn all over her and i would think those were some of the worst brainwashing attempts i've ever seen. I agree, but I also think you're making an argument that's a bit circular. There are women 10x hotter -- in a classic beauty sense -- than even the hottest female leads. Why? Why aren't the hottest actresses the ones who are "money in the bank"? Shouldn't their hotness make them even more money in the bank? Or, as you yourself asked, "why can't they let that piece of ass in the background be the major star instead?" I mean, even models that make it as actresses, aren't the hottest models (cue Milla Jovovich). There's a few exceptions who prove the rule (for me, young Halle Berry hits it), but I'm not sure there's any model-beautiful leading ladies, and exceptions are rare.
I suspect there's an answer to this, and that answer is: for whatever reason, audiences don't take to those impossibly beautiful women in those roles. We are okay with them as supporting actresses, we love them as models and instagram influencers (and in our collective case, strippers). But there's a direct cause-and-effect here: the most gorgeous classically beautiful women aren't appealing as leading ladies in movies, just supporting actresses, character actresses, mean girls, etc.
