Just a note most of those apps (if you can find one) will alert the sender that you're capturing the video - but I'm guessing she wouldn't care anyway

Take a picture from another phone or a web cam on your PC. Cast your phone's screen to your PC and use any screen recording app.
I'm trying to avoid that. Loss of quality and is a hassle. Is that what people end up having to do?

As a techincal solution, capturing over component input works, as component, if clean, avoids the nanny-state functions of HDMI, et al.

There are plenty of apps that capture live everything that hits your phone's display, and do not notify anyone of it (to shailynn's point), and don't require root. E.g., AZ Screen Recorder. It'll capture everything -- including you hitting the snapchat icon, going over to messages, clicking on her name, etc., but will get the entire video too
