For my first time doing OTC, I guess I want to ease into it, (Yeah, I noted the pun).

I always take her to a meal before sex. It puts the girl at ease and makes her feel less like a whore. Don't listen to Rech. He fucks DS imitations. If I were you I would do dinner instead of lunch. Sex after a dinner date is more common whereas sex after lunch, while certainly possible, seems less likely on a first date. You need to make it as easy as possible for her to have sex with you. With my regulars we also do a show or something else fun after dinner but that comes later, not on a first date.
My biggest concern is that it sounds like you haven't even mentioned post meal activities. Is that right? If so, that's a mistake. Even if she is low mileage and doesn't do OTC much, I would make clear that I'm hoping to go back to my hotel for paid fun afterwards. I might tell her that there's no obligation if she's not comfortable with me with me after the meal, but I make it clear respectfully that if she wants my money we're gonna fuck. If you don't do this, there's a good chance she stops with lunch. Yes she might say no if you mention sex up front but if so you don't want her anyway. Most guys are much too timid in the way they approach sex with strippers because they treat them exactly like a civilian woman. Don't make that mistake. And don't listen to SJG when he claims otherwise. He has never been out of his mom's basement.
I would also mention money up front or at least at the restaurant. Don't save it for the hotel. Do this nicely and respectfully in a non creepy way. It is absolutely critical to address these subjects confidently, maturely, in a way that doesn't turn her off. Don't be in any way demanding. Be confident, fun, safe, and generous. And if you're ok with it, I'd make clear that I want to satisfy her too so it's not just one sided. I often sell my oral skills beforehand to make it clear that I want a mutual GFE and I understand that I'm not just looking to fuck some cheap hooker. You need to take charge, don't let her take charge. Make clear what you want, what you'll pay for it, and that you are a nice safe guy. Most new guys are too embarrassed to do this, or are afraid it will scare her off, but trust me this is definitely the way to go.
Do not feel like you need to take her out to eat a few times and maybe have other dates before sex. That is how you approach civilian women, not strippers. But I assume you have gotten to know her on at least 2-3 club visits. That is important to do.
Of course I'm assuming that you plan to pay and aren't looking for free sex or a girlfriend. If that's what you want, then of course you need to be less direct about it.
Lastly, if she is a higher mileage provider (ie has done OTC many times) then I would be very clear about what I want. GFE, BBBJCIM, kissing, etc. but you clearly aren't ready for that type of conversation yet and I assume from your description that she's not a particularly high mileage type escort.

Agree with everyone above that yuo should be clear you're looking for sex (if that's what you're looking for). Unlike JS69, I usually do not discuss the sex in detail. "And then after lunch, we'll go back to my hotel room" is all that's needed (sometimes I'll throw a "for sex" in there, just in case). But you'd better mention the sex, or there's a chance there won't be any.
So I'm not that experienced an OTCer (not really my thing) but this being TUSCL of course I have an opinion :)
First – it's unclear as to whether you are eyeing her as a potential GF or just to fuck her OTC.
As JS69 mentioned; if you are eyeing her as a potential GF; then you proceed as you would with a civvy.
If you are just interested in sex then as Subra mentioned there probably isn't a right or wrong w/ respect to lunch or no-lunch b/f fucking – perhaps w/ a newbie OTCee; spending more time w/ her b/f the deed may make her feel a bit more comfortable; but at the end of the day IMO if she's doing it for the $$$ then I don't necessarily think it'll make that much of a difference b/c it's not as if one has to woo her; for the most-part IMO.
Women can be very hard to read; and strippers even more – more often than not young and/or inexperienced SCers end-up reading strippers wayyy wrong.
According to your review; you just met her and she agreed to OTC: most women are usually not this easy especially w/ a guy they just met IN A STRIP-CLUB.
Anything *is* possible but IME more often than not the custy and dancer often see things differently especially if the custy is seeing the dancer as a romantic interest where all along the dancer is *just* looking to get paid and thus pretending to be w/e the custy wants her to be in order for her to seal-the-deal/get-paid.
No one can categorically say that she may not be into you; just that IMO/IME that is often not the case and often times custies don't see it this way.

A few of you have made comments about lunch/dinner before OTC, but always from the point of view of whether it will make the stripper more comfortable or whatever. For me, I think this is completely the wrong point of view -- the one good reason to do lunch or dinner before OTC is that I want to -- IT'S ALL ABOUT ME DAMMIT!. And, I like going to dinner with strippers, I love talking to my CF, and drinking with her, and flirting, and seeing the wave of turning heads as she walks by. I realize that for you "I just want to stick my dick in a hole" guys, this is a bizarre concept :) But I think it's an incredibly easy decision to make -- Do I want to go to lunch with her? IF so, then I'll make lunch part of the OTC. Even for me, there are occasionally girls I don't insist on lunch with, because I just want to stick my dick in a hole.
In any case, I don't sit around overthinking whether or not lunch will make the stripper more comfortable or not. It's not that I don't care, I like my CFs and want them to be comfortable, but I have no way of knowing so I don't try to puzzle it out.
