In my former life (5 years ago) I was somewhat a Vegas pool party expert. Nicky beach (now closed), rehab (now a joke) and XS at encore/Wynn were all solid bets.
Nowadays I don't know but I do know I never saw any strippers hanging out at any of them. A good number of strippers travel into Vegas on the weekends to work and during pool party time they are asleep, unless some whale has paid her/them to go with him.
I do know that the pool at The Rio had some deal with sapphires encouraging strippers to hang out there so you may want to check that out. Also Mandalay Bay used to have a topless pool area so you may want to check that as well. Be warned they usually charge guys a $50 cover charge.
Mandalay has a big cover and $100 per lounge chair. Most civvies don't go topless. Bare is only OK. Rehab is a joke.
Try the Artisan pool. It's a swingers hangout and fun too!
