I've never heard of any waitresses paying house fees. They may have designated work areas.

Shot girls in Detroit clubs must pay for the tray of shots. To make money they have to sell all the shots. That's why they're so pushy and why their dancer friends will often ask you to buy shots. Some of the shots are low (or no) alcohol and dancers may be getting those.

At Bucks Cabaret in Dallas, it's my understanding that waitresses don't pay a house fee to work, and are employees that get paid $2.13 per hour (Texas state minimum, which is the same as the federal minimum for tipped employees). However, a waitress I was talking to said that they have to pay an "exit fee" if they want to leave. The exit fee more the earlier they want to leave. I don't know if they pay an exit fee if they stay the entire shift.

@jackslash must they really buy their own shot glasses? That sounds awful. It really does explain the pushiness.

Yes. Shot girls don't get any pay. They buy the shots from the club and then sell them.

A food server I met in a casino said Arabs don't gamble or drink but they spend tons of money on food. He told me this after a customer paid $30 for a shake (that might go for $3 or $4 at Denny's).
