These days, casinos. Before COVID -- well, probably still casinos, but the clubs were higher on my priority list. I went in August, for the first time since 2019, and was quite disappointed at how much they've ratcheted up the hustle factor.
I'll go up to Vegas once in a while to one particular club... and then grab a favorite hamburger that's not available anywhere else nearby. (being Southern California and Arizona and Nevada...) that'll be Fuddruckers or heart attack grill.
It’s hard to recommend somewhere since so many new fabulous places have opened up since 2020 as in hotels/resorts and restaurants.
I like to go to In & Out because there are none where I live. I like to have lunch at Eataly. If you like buffets I still think Wicked Spoon at Cosmopolitan is my favorite although there are more extravagant ones out there.

Jay - The last time we were in Vegas we went a bit outside the city to the Suncoast which had 3 tables of $5.00 craps. Strip clubbing in vegas sucks. We stay at the golden Nugget because Wife loves downtown and I like the poker room there.
Casinos and restaurants and as Skibum mentioned some outside the city casinos, I usually stay with friends who like to head to the older side of downtown, but I never hit the clubs, probably because I never do Vegas as a single.
City center is a fun place to stay but can be pricey. Stay at Aria or Cosmo. Planet Hollywood can save a bunch. Get the MGM Mastercard and it’ll bump up your tier status and unlock 25-30% discounted room rates.
Gamble at those places, Cromwell for a bit cheaper. Circa is fun in old Vegas and the pool is great to watch sports and gamble at the tables in the pool. Cheap craps consistently at the Gold Coast.
I previously liked the Vegas club scene and found value/extras in the big clubs. Last two trips have been solely to Chicas.

I get to vegas about 2-3 x per year. All conventions, I would never go for a personal get-a-way.
I avoid strip clubs at all cost. They are overpriced, rip-off and in the vast majority of cases the young girls are just looking to seperate you from your cash as quickly as possible.
casino bars are the place to hang out. look for singles, doubles or packs of 3 girls. I start talking, push out a credit card (face up so they cant read my number) and I have an old ID from Illinois that proves i am not LE - and let the negotations begin.
Using this I got 2 girls at the Palazzo (back in 2010) to have a few drinks and go back to my room for $500 (total including drinks). I will admit they were: 1) 10's 2) desperate for cash due to the crisis 3) told me it was the pre-happy hour special because they thought they could get a few more men that night.
ended up staying until 9pm when they reluctantly left after proved to them I was out of money
Ive only been to the renaissance there for hotels.
For casinos, i dont know about gambling. We went to different casinos because of the sight seeing and just seeing the hotel itself. Bellagio, caesars palace, mandalay bay, luxor…
We also probably didnt go to the best restaurants. People were crazy over in n out burger then, because its a west coast only chain I believe
I hate Vegas. I don't gamble, the strip clubs are a ripoff, the environment is a sensory overload. Like Robert DeNiro says in Casino, it's all set up to take your money.
Last time I was there, my excursions out of the city (the ghost towns, Hoover Dam, Grand Canyon) were the highlight of the trip.

Hotel?
-Palazzo, their standard suites are 772sq ft. We prefer the two room executive suites.
Casino?
-Impartial, but a good sports bar matters to me. I like craps at $5.....only place I found that was at Jerrys Nugget (see Chicas and Palamino)
Dining?
-Not a priority, because I'm pulling workday overtime at the clubs.....food is an afterthought....a necessity getting in the way.

Dining: Farmer Boys, Oyos Locos
Hotel: Encore
Casino: Poker room at Encore
Dining: Mizumi (at Wynn) and Joe’s Stone Crab
