I know the dayshift is by far the best shift in terms of extras and it not being a clubby club...what's the cutoff for that? At what time would you say it's not worth going if you're looking for extras and to just chill without it being too crowded?

I wouldn’t go if I was going to arrive after 7:00 pm. The major exception would be if I was looking to pull some OTC action—then I think 7:00 pm would be about the perfect time to get there to catch the end of dayshifters.
Per my limited experience, I wouldn't say extras or a good-time can't be had on nightshift, it's just one needs to be a more careful and patient shopper
