Too many bouncers are meatheads with zero-training that are more concerned with being tough-guys than properly deescalating situations - these meatheads had ill-intentions in mind when they took him out the backdoor instead of the frontdoor (the club is in the middle of a very long shopping center and there's nothing behind the club and no easy way to get to your car other than walking around the entire shopping center which has dozens of stores).
It seems the victim jumped in the canal trying to get away from them and perhaps didn't know how to swim - this is a predominantly AA club particularly at night and it is my understanding that many AA folks do not know how to swim
It's just speculation that he jumped in the canal. He could have jumped, fallen, been pushed, or thrown in. Either way from reading that article the bouncers there seem to be out of control.
At some of these places, reading these accounts, it is clear that bouncer are escalating conflicts. Maybe the customer was in the wrong, but the bouncers are provoking them. Sometimes this is because these bouncers are carrying concealed firearms.
Clubs which hire such bouncers are a menace to the community and they do have to be closed.

That club is the last place my ATF worked. Last time I saw her in a club, although many years ago.
