I find it hard to believe that some of these sign writers didn't know what they were doing.

Mikey, many Christians are pretty clueless about the real world. I totally believe they could come up with those signs and not understand the humor. For example, a woman on her knees means in prayer. Most Christian women don't give blow jobs.
