I don't go to clubs that often. It can be quite a cost-prohibitive habit. But when I get a chance to go, I typically choose The Cricket. The deciding factor is not so much what is available there, but what they don't put you through. No valet, no VIP entrance fees, and not a high-pressure environment. Usually there are deals on buckets of beer.

Waitresses and bartenders tend to be as attractive as the dancers.

I rarely run into the same girl twice here, and the variety is solid from what I can tell. VIP chinanery is starting to slip in here, as in, there might be a half-off night on Monday, but a savvy dancer knows how to get around that. Depends on what you're willing to put up with and whether you really want to argue with the hottest dancer in the club.
